1. Activate the Yeast
Measure out a few tablespoons of warm water (or slightly warm sour cream) in a small bowl. Add a tiny pinch of sugar and sprinkle both packets of active dry yeast on top. Let it sit for 5–10 minutes until frothy and bubbly.
2. Mix the Dough
In a large mixing bowl, combine the flour and salt. Add the cottage cheese (mash slightly if curds are large). Pour in the activated yeast mixture and the sour cream. Knead with your hands until a soft, cohesive dough forms. Adjust with more flour or sour cream as needed.
3. First Proof (Rise)
Cover the bowl with a clean kitchen towel. Place it in a warm, draft-free spot for 45 to 60 minutes, or until the dough has noticeably puffed up and roughly doubled in size.
4. Roll & Cut (Szaggatás)
Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper. Turn the dough out onto a lightly floured surface. Roll it out until it is about 2 cm (3/4 inch) thick. Using a sharp knife, gently score a criss-cross pattern on top. Dip your szaggató (round cutter) in flour and cut out rounds, placing them on the baking sheet about an inch apart.
5. Bake
Let the cut pogácsa rest on the baking tray for 10–15 minutes. Beat the egg and brush it generously over the tops (avoid drips down the sides). Bake at 200°C (400°F) for 15–20 minutes, or until tall and golden-brown.

1. The Golden Rule of Cutting
Press straight down and pull straight up—never twist! Twisting seals the edges, preventing the dough from rising tall. Flour your cutter before every single cut.
2. Fold for Flaky Layers (Hajtogatás)
For pull-apart layers, roll the dough into a rough rectangle, fold the top third down and the bottom third up (like a business letter). Turn 90 degrees, roll flat, and repeat. Let rest 15–20 minutes before the final rollout and cut.
3. Don't Shock the Yeast
Take your cottage cheese and sour cream out of the fridge 20–30 minutes before mixing so they come closer to room temperature.
4. Upgrade Your Toppings
After brushing with egg wash, sprinkle shredded cheese (cheddar, Gouda, Trappista), sesame seeds, or caraway seeds on top for extra texture and flavor.
5. Save the Scraps
